    This oven baked sweet potato fries recipe is quite easy to make, but more importantly - actually crispy and tasty.

    You can't have a great dinner without a delicious side - from Parmesan zucchini chips to crispy roasted potatoes to Parmesan roasted Brussels sprouts to maple roasted carrots.

    But the king of sides is french fries. I mean, who doesn't love them? The problem is they aren't the best thing for you. Now have you had sweet potato fries? These days, most people have, but today is crispy sweet potato fries.

    These sweet potato fries have a minimal amount of ingredients but are a perfect side dish for any sandwich or even buffalo falafel.

    The key to get these fries crispy is in the cornstarch. If you don't have any, make sure you go out and buy some as the fries won't be the same without them!

    So if you want some fries, but don't want the calories or dealing with a fryer for that matter, this is the perfect recipe to try.

    Ingredient Notes

    • Sweet potatoes – you want to make sure they are evenly cut so they cook evenly.
    • Olive oil – helps cook the potatoes.
    • Cornstarch – coats the potatoes and the key to help the fries get crispy.
    • Garlic powder, salt, paprika and black pepper – enhances the flavor.

    Toss the sliced sweet potatoes with some olive oil in a bowl. Mix together the cornstarch and spices then toss in with the sweet potatoes.

    Place evenly on a parchment-lined baking sheet and bake at 425°F for 15 minutes before flipping and baking another 15 minutes. Turn the oven off and let them sit for another 20 minutes so they continue to get crisp.

    Do I Need to Soak the Potatoes?

    While soaking helps russet potatoes release some of their starch, I've found it doesn't matter for sweet potatoes.

    I've tried soaking and without and it doesn't make a difference so why take the extra step? If you want to soak them, soak for at least an hour or overnight.

    Why Does Cornstarch Make the Fries Crispy?

    Cornstarch swells and holds onto water when heated with a liquid. However as the heat increases, the water evaporates which leaves behind just the cornstarch, creating a crispy texture.

    How to Reheat Fries?

    Turn oven to 400°F and place the fries in an even layer on parchment-lined baking sheet. Roast for 10 minutes, which should be just enough time for the sweet potato fries to warm through, but not get overcooked.

    While I'm a traditionalist when it comes to sweet potato fries, you can mix it up. Some options include:

    • Spices - kick it up a notch with some cayenne pepper or use your favorite seasonings like Italian or Cajun seasoning.
    • Cheese - tossing some freshly grated Parmesan cheese in at the end never hurts.
    • Herbs - fresh herbs like rosemary, sage, parsley or thyme work great.

    • Flip the fries: take the time to actually flip the fries so you can get them crispy on both sides.

    Ingredients

    • 1 lb sweet potatoes, skin removed and cut ¼ inch thick slices
    • 1 tablespoon olive oil
    • 2 tablespoon cornstarch
    • ½ teaspoon garlic powder
    • ¼ teaspoon paprika
    • ¼ teaspoon black pepper
    • ½ teaspoon sea salt

    Instructions

    • Preheat oven to 425°F. Line baking sheet with parchment paper. Cut sweet potatoes into ¼ inch thick slices and place in bowl. Toss in olive oil.
    • In small bowl, whisk together cornstarch, garlic powder, paprika and black pepper. Toss sweet potatoes in cornstarch mixture.
    • Place on large baking sheet, making sure the fries aren't touching each other. Bake for 15 minutes. Flip and bake for another 10-15 minutes. Turn oven off and let fries sit in oven for another 20 minutes as they will continue to crisp. Season with salt.
