With a roasted garlic spread, fresh herbs and cheese, this garlic pizza tastes like everyone's favorite garlic bread, but in pizza form.
There are just so many pizza recipes out there - from a Philly cheesesteak pizza to pumpkin pizza to butter chicken pizza.
And this garlic pizza is the latest and greatest. By roasting the garlic, you get an subtle yet slightly sweet garlic flavor. Add in the fresh herbs and gooey cheese, what could be better?

Ingredient Notes
- Pizza dough - while I like to make my own, store-bought dough works fine.
- Roasted garlic - by roasting, you add an mellower yet sweet garlic flavor. Check out how to roast garlic.
- Butter - mixed with the roasted garlic to make the sauce base.
- Herbs - you can never go wrong with fresh herbs and the combination of basil, oregano and thyme works great.
- Cheese - mozzarella adds that creamy factor while Parmesan cheese adds a little nutty flavor.
Ingredient Swaps
As with any recipe, you can mix up the ingredients you use for this garlic pizza. Some variations include:
- You can replace the butter with olive oil if you prefer.
- I'm a fan of fresh herbs when possible but you can use dried as well. Just use ⅓ of the amount as it is more potent. You can also use Italian seasoning.
- I like the traditional mozzarella cheese, but cheddar, fontina or havarti cheese all are good substitutes.

Mix the roasted garlic and herbs with the butter in a small bowl. Spread evenly on the pizza.
Add the cheese. Broil on high for 4-5 minutes or until the pizza is done. Remove and add some more fresh herbs if desired.

Of course not. I just like making pizza dough, but you can buy fresh dough where you roll out yourself or pre-baked crusts.
I still suggest buying the fresh dough. Most grocery stores carry it these days, but Trader Joe’s has the best!
The stone holds heat and gives you a nice crust on the bottom which is important in a great pizza.
I know not everyone has a pizza stone. If you don't, use a cast iron skillet. Just place some oil in the skillet before adding the dough and toppings and bake on the bottom third of the rack instead.
Let's be honest, there isn't anything wrong with cold pizza. But if you must reheat this garlic pizza, don't do it in the microwave or it will get soggy.
Just place on a baking sheet in the oven at 375°F for about 10 minutes or until warmed through.

Garlic Pizza
Ingredients
No-Knead Pizza Dough
- 250 grams all-purpose flour (about 2 cups)
- 1 teaspoon sea salt
- ¼ teaspoon dry active yeast
- ¾ cup warm water
Pizza
- 1 bulb roasted garlic
- ¼ cup unsalted butter, at room temperature
- 1 tablespoon fresh basil, chopped
- 1 tablespoon fresh oregano, chopped
- 1 tablespoon fresh thyme, chopped
- ⅛ teaspoon salt
- 2 cups low-moisture mozzarella, grated
- ¼ cup freshly grated Parmesan cheese
- sprinkle of cornmeal
Instructions
No-Knead Pizza Dough
- In a medium bowl, mix together the flour, salt and yeast. Add the water and mix with a wooden spoon or your hands. It should be sticky, but not lumpy.
- Cover with saran wrap and a towel in a warm place, allowing it to rise for 24 hours. Transfer to a floured surface and shape into ball. Use when ready.
Pizza
- If not already done, roast your garlic.
- Place pizza stone in oven 8" from the broiler element and preheat to 500°F. You want stone to be in oven for at least 30 minutes at 500°F.
- In a small bowl combine the roasted garlic, butter, fresh herbs and salt.
- Sprinkle pizza peel with cornmeal or flour. Use your hands to gently tug, pull and push the dough to the shape you want and place on pizza peel.
- Add the garlic butter mixture evenly over the dough, leaving the edges untouched. Sprinkle the mozzarella and Parmesan evenly over the top.
- Once stone is preheated, turn broiler to high. Transfer pizza to pizza stone and bake for 4-5 minutes or until top is bubbly and bottom is golden brown.
