INGREDIENTS

1. Olive oil 2. Sweet potato 3. Spices 4. Bell peppers 5. White onion 6. Black beans 7. Brown Rice 8. Salsa verde 9.Corn 10. Tomatoes 11. Guacamole 12. Cheese

Step 1

Preheat oven to 425°F. In large bowl, add sliced peppers, onion, 1 tbsp olive oil and salt and pepper to taste. Toss to combine.

Step 2

In same bowl, toss in the sweet potato, chili powder, cumin, paprika, garlic powder, kosher salt, black pepper and 2 tbsp olive oil.

Step 3

Spread peppers and onions on one side of large baking sheet in an even layer and sweet potatoes on the other side.

Step 4

Bake for 35-40 minutes until the sweet potatoes are tender and caramelized on the edges. Flip everything halfway through.

Step 5

Assemble the bowls. Add rice, sweet potatoes, peppers, onion, black beans, corn, tomatoes and guacamole. Top with cheese.

Pro Tips

1. Be consistent in dicing the vegetables so they cook evenly.  2. If you don't want to make your own fajita seasoning, you can easily buy one at the grocery store. 3. You can control the level of the spice depending on the salsa you use to mix in the rice.
