Instructions
Heat oil in large skillet over medium heat. Add the tortillas in batches, frying for 1-2 minutes per side. Transfer to a paper towel-lined plate and lightly salt.
Add more oil if necessary and cook the eggs until scrambled. Remove from the skillet.
Add the salsa to the skillet, cooking for 2 minutes. Return the fried tortillas to the the skillet and toss gently in the salsa.
Add the eggs, stirring to combine and top with cheese. Cover the skillet so the cheese melts. Top with your favorite toppings.
Notes
For a healthier version, bake the tortilla chips at 350°F for 15-18 minutes.
If you want a crispier texture, remove the sauce from the heat and just toss the chips with the eggs and cheese. Then add the sauce on top of some random chips.
If you have leftover protein like chicken or beef, just add it to the skillet.
Add some jalapeños with the seeds if you like extra heat.
Don't use pre-shredded cheese. It contains wood pulp and preservatives so it doesn't melt well.
