Chilaquiles con Huevos

This chilaquiles con huevos recipe is a quick and easy Mexican breakfast comprised of fried tortillas, salsa, eggs and cheese.

Ingredients

  • 6 corn tortillas, cut into triangles
  • ¼ cup vegetable oil
  • salt
  • 4 large eggs, lightly beaten
  • 1 cup salsa
  • ½ cup pepper jack cheese
  • toppings (avocado crema, cilantro, green onions, peppers, cheese)

Instructions

  • Heat oil in large skillet over medium heat. Add the tortillas in batches, frying for 1-2 minutes per side. Transfer to a paper towel-lined plate and lightly salt.
  • Add more oil if necessary and cook the eggs until scrambled. Remove from the skillet.
  • Add the salsa to the skillet, cooking for 2 minutes. Return the fried tortillas to the the skillet and toss gently in the salsa.
  • Add the eggs, stirring to combine and top with cheese. Cover the skillet so the cheese melts. Top with your favorite toppings.

Notes

  • For a healthier version, bake the tortilla chips at 350°F for 15-18 minutes.
  • If you want a crispier texture, remove the sauce from the heat and just toss the chips with the eggs and cheese. Then add the sauce on top of some random chips.
  • If you have leftover protein like chicken or beef, just add it to the skillet.
  • Add some jalapeños with the seeds if you like extra heat.
  • Don't use pre-shredded cheese. It contains wood pulp and preservatives so it doesn't melt well.
