Pesto Crusted Salmon
This salmon coated with a pesto breadcrumb mixture is a quick weeknight meal that is not only easy to prepare, but super tasty as well.

- 4 (6 oz) salmon filets
- ⅔ cup panko breadcrumbs
- 3 tablespoon pesto
- salt and black pepper
- cooking spray
Preheat oven to 400°F. Mix together the breadcrumbs and pesto in a small bowl.
Season the salmon with salt and pepper. Coat each filet with an even amount of the breadcrumb mixture on top and spray with some cooking spray.
Place on a baking sheet and bake for 12-15 minutes, or until the salmon is done and the topping is golden brown.
- Use wild salmon when possible. It is healthier for you and just tastes better.
- If you want to save time, just use store-bought pesto.
- You know the salmon is done when it is opaque and easily flakes.
