Heat large skillet over medium heat. Combine butter, garlic, Pecorino Romano and parsley in small bowl, stirring to combine.
Spread the softened garlic butter on one side of 4 slices of bread. Place 2 slices of cheese in between 2 slices of bread, with the butter on the outside.
Place the sandwiches in the skillet. Cook until golden brown on one side, about 3-4 minutes. Flip and cook until golden brown on the second side and cheese has melted, another 3-4 minutes. Cut sandwiches in half and serve.
Notes
As with any sandwich, bread is what makes a quality sandwich so make sure you use something you enjoy.
Since garlic is one of the main ingredients, use freshly minced garlic. Don't use the jarred stuff.
Don't skimp on the butter. Make sure you use all of the butter when spreading on the bread. It creates that crisp, buttery, golden exterior.
If you want extra gooey cheese, cover the sandwich while it cooks.
Added protein never hurts and some crispy bacon always pairs well.
