INGREDIENTS

1. Corned beef 2. Unsalted butter 3. Sweet onions 4. Guinness beer 5. Red cabbage 6. Carrots 7. Apple cider vinegar 8. Irish cheddar cheese 9. Flour tortillas 10. Toppings

Step 1

Place corned beef in slow cooker. Add just enough water where beef is covered. Add spice packet. Cook on high for 8 hours.

Step 2

Add 2 tbsp butter to large skillet over medium heat. Add onions and cook for about 10 minutes, stirring frequently, until softened.

Step 3

Slowly add beer, let it cook into onions, then add more beer. Continue until beer is gone and onions are caramelized.

Step 4

In a small bowl, toss together the red cabbage, carrots and apple cider vinegar. Season with salt and pepper.

Step 5

Shred corned beef and serve on warmed tortillas and top with some caramelized onions, slaw, cheese and any toppings you desire.

Pro Tips

1. Replace the water with Guinness beer for even more flavor when cooking corned beef. 2. To make the tortillas pliable, heat a small skillet over medium heat and cook for 30 seconds per side.  3. Don’t skip on toppings as they enhance the flavor.
