With just a few ingredients, these egg and cheese hash brown waffles make for an easy and delicious all-in-one breakfast.
I always have a bag of frozen hash browns in the freezer and try find ways to utilize them all the time - like my hash brown egg muffins.
But have you ever used your waffle iron to make something other than a traditional waffle? Well until today, I hadn't. I've seen plenty of recipes over the years you can make with a waffle iron, but just never got around to it.
However I'm now totally hooked on the unique waffle recipe game. The waffle iron makes that crust you want with hash browns and you don't even have to do any of the work.
It really is an all-in-one breakfast with eggs, cheese, hash browns and onions. You could even add some smoked bacon or ham if you want.
So if you're looking for something that is quick to put together, give these easy waffles a try. And if you want another unique option, try these nutella waffles.

Recipe Ingredients
- Eggs - gives you protein and helps bind everything together.
- Hash browns - use frozen hash browns.
- Sharp cheddar cheese - can replace with your favorite cheese.
- Green onions and garlic - adds additional flavors to the waffles.
- Salt and black pepper - enhances the flavor.
Step-by-Step Instructions
- In a medium bowl add the eggs and beat until the whites and yolks are blended.
- Stir in hash browns, cheese, green onions, garlic, salt and pepper.
- Heat waffle maker to medium heat and spray with nonstick cooking spray. Add half the mixture to the waffle iron and cook according to package instructions. (Mine is about 5 minutes)
- Remove and repeat with remaining egg/hash brown mixture. Serve immediately.
What Waffle Maker to Use
For these waffles, I find a regular waffle iron works better than a Belgian waffle iron as a Belgian waffle iron is deeper, which doesn't allow for more of the surface to get crusty.
Topping Ideas
You can use whatever you have in the fridge to top of the egg and cheese waffles but some go-tos for me are salsa, avocado, tomatoes, sour cream or caramelized onions.
Pro Tips/Recipe Notes
- Let frozen hash browns come to room temperature or place in the microwave for 30 seconds before mixing.
- Don’t use pre-shredded cheese. It doesn’t taste as good and also has additional ingredients that you don’t need.
- If you want some protein, try 4 oz of bacon, ham or sausage.
- Turn your oven to the warm setting and place finished waffles in the oven to keep warm while the rest are cooking.
