    Chocolate Covered Rice Krispies Bat Treats

    Homemade brown butter rice krispies dipped in dark chocolate make these bat treats the perfect Halloween dessert or snack.

    What is it about Halloween and making monster-themed desserts? It just seems to bring out our creativity. I had been wanting to make brown butter rice krispies treats for quite a while. Then it occurred to me that Halloween was around the corner which inspired these bat treats.

    I'll be honest, the brown butter makes these amazing on their own, but where is the fun in that? With just a little extra work, you'll have not only great tasting, but great looking Halloween treats!

    They are a great way to be creative with your kids. Be careful though, they won't last very long.

    Recipe Ingredients

    • Unsalted butter - browned to add flavor.
    • Marshmallows - melts to bind everything together.
    • Vanilla extract and sea salt - enhances the flavor.
    • Rice Krispies cereal - can't use any other type!
    • Chocolate - use dark, semi-sweet or milk chocolate.
    • Refined coconut oil - helps the chocolate harden.
    • Oreos - used for the wings.
    • Edible eyes - makes the bat eyes.

    Step-by-Step Instructions

    1. Line a 13x18 inch sheet pan with parchment paper. In a large pot, melt butter over medium heat. It will melt, then foam, then turn clear golden and finally start to turn brown and smell nutty, which should take about 2-3 minutes.
    2. Remove from heat and stir in the marshmallows
    3. Stir until everything is melted.
    4. Add in the vanilla extract, sea salt and rice krispies, tossing everything to combine.
    5. Transfer to the pan and pack tightly.
    6. Let treats cool for an hour and then cut into 2 inch circles.

    1. Place the chocolate and coconut oil in a microwave safe bowl. Microwave in 30 second intervals, stirring in between and repeat until the chocolate is melted.
    2. Use two forks to dip each rice krispies treat into the melted chocolate.
    3. Place the chocolate covered rice krispies treat onto parchment paper. Place in fridge for 10 minutes to harden.
    4. Break the cookies in half and then separate all of the pieces from one another so you now have "bat wings". Scrape off the frosting and put in a ziploc bag. Cut off the tip of the bag so you can use to "glue" everything together.
    5. Pipe frosting on back of eyes and place on top of the rice krispies treats.
    6. Pipe the frosting onto the back corners of the broken cookie pieces and press two cookies on the back of the rice krispies treats to form wings. You now have Bat treats.

    How Do You Know When Butter is Browned?

    Add the butter to the skillet over medium heat. Once the butter is melted, it will foam up and then subside. This is when you watch carefully as lightly browned specks will start to form at the bottom of the pan.

    You will know the butter is ready when there is a nutty aroma, which gives these treats a great flavor.

    Soft and Chewy Rice Krispies Treats

    High heat is the biggest culprit for hard rice krispies treats. It will take a few more minutes of cook time, but after the butter is melted, remove from heat and stir in the marshmallows. This will give you soft and chewy rice krispies treats.

    How to Freeze

    You can store no more than two days at room temperature in airtight container. No need to place in the fridge. To freeze, place in layers separated by parchment paper in airtight container and freeze for up to 3 months. Let stand at room temperature for 15 minutes before serving.

    Pro Tips/Recipe Notes

    • Do not skip browning the butter, as it gives the bat its unique flavor.
    • Use a 2 inch biscuit cutter to cut the rice krispies treats. You can also roll into balls if you prefer.
    • Use quality chocolate. The better the ingredients, the better the flavor.
    • Scrape off the frosting from the Oreos and use to "glue" the eyes and wings to make the treats.
