These almond butter donuts with a mocha glaze and almond streusel are the perfect weekend breakfast any time of the year. If you're looking for a good baked donut recipe, these are it.
Another day, another recipe inspired by Half Baked Harvest's cookbook. When browsing recipes in the cookbook, one of the first I noticed was her mocha almond streusel donuts. However it was with a standard fried donut. I wanted to mix it up and am always looking for an excuse to use my donut pans.
As the streusel had almonds in it and we had an abundance of almond butter since I bought some from Costco, I figured why not do a baked donut that had almond butter in it. If you don't have almond butter, not a huge deal as you can just replace it with peanut butter but I highly recommend it.
Yes I know a good old-fashioned fried donut is hard to beat, but when you want something a little more cake-like or if it has something like almond butter, baked donuts are the way to go. Plus they are way easier, which frankly is what I look for on a Saturday morning.
While the mocha glaze is fantastic, it really is the almond streusel that puts it over the top. I actually made these when my mom was in town, and she loved the streusel so much, she's making a cookie inspired by it. So if you're looking for a good baked donut recipe, then these almond butter donuts should be at the top of your list.
What Ingredients are in this Almond Butter Donuts Recipe?
- All-purpose flour
- Baking powder
- Spices - salt, cinnamon, nutmeg
- Almond butter
- Maple syrup
- Milk
- Unsalted butter
- Egg
- Canola oil
- Vanilla extract
- Raw almonds
- Shredded coconut
- Light brown sugar
- Instant espresso powder
- Dark unsweetened cocoa powder
How to Make Almond Butter Donuts
1. Preheat oven to 350°F. Mix together almond streusel ingredients and use your hands to incorporate room temperature butter. Spread evenly on parchment-lined baking sheet and bake for 15-20 minutes or until golden brown.
2. In small bowl, mix together dry ingredients for almond butter donuts.
3. In medium bowl, mix together wet ingredients for donuts.
4. Add dry ingredients to wet ingredients and mix until just combined.
5. Pipe into donut pan and bake for 8-10 minutes.
6. Heat milk in bowl in microwave for 30 seconds. Whisk in remaining mocha glaze ingredients until the glaze is smooth.
7. Once donuts are baked, remove to cooling rack.
8. Dip donuts in mocha glaze and top with some almond streusel.
Do I Have to Use Almond Butter?
No you can replace the almond butter with peanut butter, sunflower seed butter or cashew butter. Each will give a different taste, but all will work well with these baked donuts.
Is it Doughnuts or Donuts?
So I guess the real way to spell it is doughnuts but Dunkin’ Donuts popularized the spelling of donuts back in the 1950’s. For me, I go with donut.
Are Baked Donuts Healthy?
I wouldn’t go as far as to say they are healthy, but they are healthier than fried donuts. Like anything, eat in moderation. You won’t regret eating these pumpkin donuts!
Tips for Making Almond Butter Donuts
- Even though they say non-stick, spray your donut pans with non-stick cooking spray to make sure the donuts come out.
- Use baking powder that is less than a year old since it has been opened. If you use older baking powder, it won’t be powerful enough to help leaven the donuts. You can test it by stirring half a teaspoon of baking powder into a cup of hot water. It will immediately start to fizz and release carbon dioxide gas if it’s still fresh enough to use.
- When measuring the flour, lightly spoon it into a measuring cup and then level it off with the back of a knife to get the right amount.
- You can spoon the batter into the donut pans, but the easiest way to get the batter in the pan is by using a pastry bag or Ziploc bag with the corner cut off.
- Just like with any cake type batter that you make, you’ll know the almond butter donuts are done when a toothpick comes out clean.
- Let the donuts cool completely before you dip them in the glaze.
- Leftovers will store well in at room temperature for 1-2 days in an air-tight container.

Almond Butter Donuts with Mocha Almond Streusel
Ingredients
Almond Butter Donuts
- 1 cup all-purpose flour
- 1 teaspoon baking powder
- ยผ teaspoon salt
- โ cup almond butter
- โ cup maple syrup
- ยผ cup milk
- 2 tablespoon unsalted butter, melted and cooled
- 1 egg
- 1 tablespoon canola oil
- 1 teaspoon vanilla extract
Almond Streusel
- ยผ cup raw almonds, finely chopped
- ยผ cup shredded coconut
- ยผ cup light brown sugar
- 3 tablespoon all-purpose flour
- โ teaspoon ground cinnamon
- โ teaspoon ground nutmeg
- 3 tablespoon unsalted butter, at room temperature
Mocha Glaze
- 2 tablespoon milk
- ยฝ tablespoon instant espresso powder
- ยพ cup powdered sugar
- 2 tablespoon dark unsweetened cocoa powder
- 1 teaspoon vanilla extract
Instructions
